Single Origin Mexico — Chiapas Highlands
Some coffees just tell a story. This one starts at 1,400–1,900 meters above sea level in the misty highlands of Chiapas, Mexico — where cooler temperatures slow the cherry's growth and concentrate every drop of flavor into something worth savoring.
Tasting Notes
Expect a creamy body with bright lemon acidity, a warm sweetness of brown sugar, and a satisfying finish of dark chocolate. Medium acidity keeps it smooth and approachable, whether you're pulling a morning shot or brewing a slow afternoon cup.
Origin & Sourcing
- Region: Chiapas, Mexico
- Altitude: 1,400–1,900 M
- Process: Washed
- Varieties: Typica, Catimor, and Bourbon
The washed process strips away the fruit before drying, letting the bean's true character shine — clean, bright, and incredibly consistent cup after cup.
Brewing Tips
These pods are dialed in for drip and pour-over, but they'll shine in any method you trust. Use 200°F water and a 1:15 coffee-to-water ratio to let those lemon and chocolate notes open up fully. For cold brew, steep 12–14 hours for a silky, low-acid concentrate.
